To celebrate a successful first week at pre-school and the start of a very different daily routine, I thought I'd make my little dudes a special afternoon tea at the weekend. As you've probably guessed from the recent school desk makeover, superheroes reign supreme in this house, and as I had a few party bits and pieces lying around, I thought I'd put both together to make some treats for the boys.
On the menu were cheese and ham Batman toasties, red velvet Superman cupcakes (with the most horrendously applied buttercream ... not a strength of mine), and an incredibly yummy Incredible Hulk smoothie. The boys were thrilled!
Now my two are pretty good eaters but the eldest has a complete and utter meltdown if he even senses that a vegetable might be within twenty metres of his plate. However, put it in a smoothie, serve it in a fancy bottle and give it a superhero name and he can't get enough of it.

Two cups of spinach
Two cups of water
(I have Joseph Joseph nest cups. We bake a lot using American recipes so they were worth the investment rather than using google to convert everything rather haphazardly in to grams).
One cup of chopped pineapple
One cup of chopped peach
BLEND AGAIN but only for a minute or so until smooth. If you whizz it for too much longer a lot of air tends to get in to the drink and it ends up a little frothy.
Could it be any easier?! These ingredients translate to approximately half a litre of smoothie. Yum!

P.S. It's really hard not to smirk when they tell you how the smoothie is the BEST DRINK EVER when you know it's packed full of the much-hated spinach. It's really, really hard.
